Vegan Pancakes

My little sisters requested some pancakes. Knowing how much she loves eating healthy I decided to make some gluten free and lactose free pancakes. They turned out to be delicious. Today I would like to share the recipe with you.

Ingredients:

  • 1 1/2 Ripe Banana

  • 1 cup of soy or almond milk

  • 2 Tsp Baking powder

  • 1 1/4 cup flour,organic unbleached.

  • 1/4 salt

  • 2 Tbsp Coconut oil

  • 1 tbsp Vinegar

  • Optional 1/2 Teaspoon of vanilla extract

Step by step process:

  • In a bowl combine all your dry ingredients.

  • Then in a separate bowl, whisk together your milk and vinegar.This will turn your regular soy milk into soy buttermilk! Allow to sit for about 5-10 mins

  • Mash up the banana with a fork or your hands.

  • Add all these ingredients except your banana into the mixer blend until smooth.

  • Add the mixture into a bowl with your mashed bananas,mix it up until well combined.

  • Warm up your pan,until the coconut oil is melted and all greased up.

  • Flip pancakes carefully until both side are lightly brown.

  • Serve hot with maple syrup, and fruit,and nuts (add ice cream on the side
