Vegan Pancakes

My little sisters requested some pancakes. Knowing how much she loves eating healthy I decided to make some gluten free and lactose free pancakes. They turned out to be delicious. Today I would like to share the recipe with you.
Ingredients:
1 1/2 Ripe Banana
1 cup of soy or almond milk
2 Tsp Baking powder
1 1/4 cup flour,organic unbleached.
1/4 salt
2 Tbsp Coconut oil
1 tbsp Vinegar
Optional 1/2 Teaspoon of vanilla extract
Step by step process:
In a bowl combine all your dry ingredients.
Then in a separate bowl, whisk together your milk and vinegar.This will turn your regular soy milk into soy buttermilk! Allow to sit for about 5-10 mins
Mash up the banana with a fork or your hands.
Add all these ingredients except your banana into the mixer blend until smooth.
Add the mixture into a bowl with your mashed bananas,mix it up until well combined.
Warm up your pan,until the coconut oil is melted and all greased up.
Flip pancakes carefully until both side are lightly brown.
Serve hot with maple syrup, and fruit,and nuts (add ice cream on the side
