Hey everyone!!!! It's a beautiful Sunny day and I'm fully enjoying my day off. Today im feeling extra creative. SO I WAS CRAVING A FALAFEL! I used what ever I could find in my fridge to try to replicate a falafel and it turned out to be bomb. Super happy to hear what you guys think about this one.

Ingredients for the falafel:

  • 2 cups of white kidney beans

  • 1 onion

  • 1 tsp of salt

  • 1 tsp pepper

  • 1 tsp turmeric

  • 1 tsp basil

  • 1/3 cup of olive oil if you don't have Doterra Coconut oil

  • 1 cup Tomato Paste

  • 2-3 beets

  • 3 pickles

  • 2 carrots

  • 2 potatoes

  • bread crumbs

Step By step Process:

  • First in a pot add the beets, carrots, and potatoes cook them until they are soft.

  • Then in the grinder add the white kidney beans, pickles, onions, beets, carrots, potatoes.

  • When it's all in small chunks add into a bowl. Mix in the spices and Tomato paste.

  • When it's all combined together and soft and mushy form your balls.

  • Get a frying pan and pour some oil over, when hot on low heat you can dip the falafels in bread crumbs (optional) add the balls on the pan flip until both sides are cooked.

  • Serve when cooled.

Tips: I served this either on a taco or a lettuce wrap. You can add sriracha, coleslaw, croutons, peppers or tomatoes. Whatever you like best. This is just all I had at the moment. I was limited on supplies at that time, but it was still pretty good.
